Low Country Boil

The low country is a section of country around Charleston, South Carolina extending south along the coast down through Georgia. The cuisine is seafood heavy, thriving on the local estuaries and fishing, abundant in shrimp, crabs, and fish.

Here on the Gulf Coast our version of the boil growing up was anything we could find with a hard shell on it out in the bay and throw in a pot with corn, sausages, hunks of garlic, and red potatoes.  When we were lucky we had button mushrooms which soaked up the flavor out of the boil

Our low country menu holds true to those lazy afternoons when dad and the uncles were fussing over the water pots and what kind of boil concoction to use. All of us kids would be running under their feet peering in to the hot pots to see while trying to avoid getting put to work.
